Short Description: This session will cover the implementation of safe protocols to continue Sensory & Consumer Research at the University of Arkansas.

Description:

Many countries around the world have implemented emergent guidelines and policies for suppressing rapid growth in lethal cases of severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) (also known as Coronavirus Disease 2019 or COVID-19). In a similar vein, many food industries and educational or research institutions have not conducted face-to-face human research that reflects sensory evaluation during regional or national lockdown periods, resulting in challenges to agricultural and food systems. Because sensory evaluation is a key operational component in product development, quality control, and marketing functions, professionals in such industries and research institutes have been seeking ways to safely continue sensory evaluation and human research. The Sensory Science Center at the University of Arkansas has implemented safety protocols for conducting sensory and consumer studies under controlled conditions. In efforts to mitigate the risk of COVID-19 virus, both novel and modified methods of sensory evaluation have been designed and applied during the current pandemic period. This presentation will highlight how such novel and modified methods along with safety protocols could be applied to conducting sensory and consumer studies in a safe and effective manner during an epidemic or pandemic period.
